YKGrub · Oct 2026 · serves 2 + baby · ~50 min · uses the pantry bharta masala
Source: Built for the 7 October 2026 CSA box (2 eggplants, one long). Uses the Baingan Bharta masala already in the pantry spice box, so it adds no new purchases.
Serves: 2 adults with rice, plus a baby portion and one lunch's leftovers.
Ingredients
2 eggplants (a long Japanese/Chinese one and a globe both work; the long one is sweeter and chars faster)
1 large onion, finely chopped
2 tomatoes, chopped
1 tbsp ginger-garlic paste, or 1 inch ginger + 3 cloves grated
2 tbsp neutral oil or ghee
1 tsp cumin seeds
1½–2 tsp Baingan Bharta masala (pantry spice box)
½ tsp turmeric
½ tsp Kashmiri red chilli powder
Salt
Cilantro to finish
Optional: 1 tsp kasoori methi, crushed between the palms at the end
Method
Char the eggplants whole, directly over a gas flame on medium-high, 12–15 min, turning with tongs every few minutes until the skin is blackened all over and the flesh has collapsed. A fork should meet no resistance. No gas: 450°F oven, pierced, 40–45 min, then 3 min under the broiler. The oven version is easier but gives up most of the smoke, which is the point of the dish.
Rest until cool enough to handle, peel off the blackened skin, discard the stem, and chop the flesh roughly. Do not purée it — bharta wants texture. Baby's portion comes out here: plain roasted eggplant flesh, nothing added.
Heat the oil, crackle the cumin seeds, then cook the onion until properly browned at the edges, 8–10 min. This is the step people cut short and it is where the sweetness comes from.
Ginger-garlic, 1 min. Turmeric, chilli and the bharta masala, 30 seconds in the oil.
Tomatoes and salt. Cook until they break down and the oil separates out at the edges, 6–8 min.
Fold in the eggplant. Cook 8–10 min more, mashing against the side of the pan, until it is thick rather than wet.
Kasoori methi if using, cilantro, off the heat.
Notes
The char is the recipe. Everything else is a standard onion-tomato masala; the smoke is what makes it bharta.
Line the burner with foil before you start. The eggplants will drip.
Vegan as written if you use oil rather than ghee.
Pairs with mast-o-khiar, which cuts the smoke, and plain rice.
